You’re organizing an event and you want to be sure that your guests will have enough to eat—even the hungriest ones. Can you imagine not having enough canapés for everyone? The horror! But you don’t want to overdo it and order too much food. What to do? No need to panic, we can help. Here are a few basic rules to help you determine what you’ll need.
In addition to the number of guests, you should take the type of event and its duration into consideration, as well as the time of day. Is it a brunch? A wedding, where you want to amaze your in-laws? Is it a cocktail party? A reception? Or do you just want to serve a few hors d’oeuvres before the main meal?
How many portions per person? Well, for an afternoon get-together, think three or four. Before dinner, three to five will do, but make sure they’re not too heavy. During happy hour, serve seven to nine. For a cocktail reception, have at least 15 to 18 per guest, unless you plan on serving a small dinner appetizer or a few heartier bites.
And don’t forget the beverages! Three drinks per person should suffice, depending on the type of reception—and the guests, of course. Be sure to serve coffee as well, and always have enough non-alcoholic beverages on hand.
When in doubt, round up your numbers, so you don’t run out of anything. Remember, some people get carried away at buffets.
If you’re serving a wide variety of finger foods, keep them small. Your guests will be able to taste everything without feeling guilty and still have room for dessert!
What’s for breakfast? Some pastries (two per person) and fruit should do it, perhaps with a bit of cheese, or an omelette with side dishes, juice and coffee.
A business lunch? Offer your guests a more traditional menu with soup or salad, a main dish, and dessert⎯something light for those who like to end their meals with a treat.
Dinner with friends? Evening meals are usually heartier than lunch, with three to five courses. A few delectable hors d’oeuvres, an appetizer, a main dish, a bit of cheese and dessert are all you need to satisfy your guests!
